Giving back: A very Mayar Christmas
At Mayar, we love to give back when we can. So, this year we decided to take our annual Christmas party to a local cookery school, with a difference. Migrateful is an award-winning charity where refugees are trained to run a wide range of cookery classes.
The team voted to learn the art of Syrian cooking for our session. Chef Lina, a mother of three from Syria who came to the UK as a refugee in 2017 led the class. Lina taught us about the ingredients, techniques, and stories behind each dish, and we were able to enjoy the delicious results together afterwards as a team.
On the menu were three traditional and warming dishes:
Raz Malalfal, or Rice with Vermicelli – a soft and fluffy dish
Fassuleah Kadreh – a spicy and aromatic lamb, green bean and harissa stew
Foul Moukalla – sauteed broad beans with garlic and coriander with pittas and yogurt
For dessert, we tucked into what is called “Harissa” in Syria – a rich and sweet semolina and coconut sponge – this was a crowd-pleaser.
Not only was the experience enjoyable, but it also allowed us to support a fantastic cause and learn more about one of the most renowned cuisines in the Middle East, all while bonding as a team.
